So following on from our first instalment, this week we have Chicken tikka salad with sweet chilli dressing. This meal can be used to create your own sweet chilli dressing but it tends to just be easier to buy one from Tesco or maybe even Aldi!

Serves 1

2 large handfuls of mixed salad leaves
3 thin slices of red onion, seperated
1 small carrot, peeled and grated
5 radishes, sliced
4cm cucumber, quartered, de-seeded and diced
100g cooked chicken tikka slices


  1. put the salad leaves, red onions, carrot, radishes and cucumber in a lidded container.
  2. wrap the chicken in cling film and add it to the container.
  3. before eating, toss the salad in the dressing and top with the chicken, discarding the cling film.

This can be adapted with extra salad leaves or chicken, or maybe even add in random bits that you like. I tend to not include the radishes for personal preference.
